Baked Oatmeal

It's a texture thing....

A bowl of almost flavorless gooeyness...

Oatmeal

I'm not a picky person.

However, when it came to oatmeal, I was never a very big fan of the stuff.

Oatmeal is so good for you, they say. 

You should eat it several times a week, they say.

Do oatmeal cookies count??

Eureka - I have found it! 

BAKED OATMEAL!!

I had eaten it a few times growing up, but a few years ago I discovered that I REALLY enjoyed it and began making it for my family several times a week!!

Away with gooeyness!!

There are so many variations one can do with it too! 

Here is the basic recipe.


3 Cups Old Fashioned Oats 
1/2 Cup Brown Sugar 
(or 1/4 cup honey for a healthier alternative
1/2 Oil 
(We like olive oil - it does have a different flavor if you are not used to it though.)
2 Eggs
1 Cup Milk or Water
2 Teaspoons Baking Powder
1 Teaspoon Salt
1 Teaspoon Vanilla Extract 
1 Tablespoons Cinnamon 

Mix well and transfer to an oiled 9x9 baking dish or cast-iron skillet.
Bake at 350* for 30 minutes if using clear baking dish or 20 minutes for cast-iron. 
Serve warm with milk or yogurt!!


Optional Variations - Make it your own!

(add one or more)

An Apple (diced)
Raisins
Dried Cranberries or Blueberries
Almonds or Walnuts 
Coconut 
Peaches 
Banana (added after baking)
Frozen or Fresh Berries 
Peanut Butter
Maple or Almond Extract in place of Vanilla 


*Note* adding fresh fruit may require a little longer baking time due to the extra moister. 
It is very good left over too!
